BeBu offers a selection of 12 original snack dishes exclusively during dinner hours. chef's introduction
Niko Martinez
Raised in Manila, Chef Niko Martinez discovered his love for cooking through weekends at the market with his parents and home-cooked meals that followed. With their encouragement, he earned a degree in hotel and restaurant management before diving into the culinary world, training in top kitchens across the Philippines and the U.S.—including Shangri-La Manila and renowned grill spots in San Francisco.
Chef Niko brought his passion to Japan in 2014, starting at Tokyo’s ‘Two Rooms’ and later joining Hilton Shinjuku’s Metropolitan Grill, where he quickly rose to Chef de Cuisine.
Now leading the revival of BeBu at Andaz Tokyo Toranomon Hills, he brings bold, soulful flavors to life with a menu rooted in classic American grill and comfort food—infused with his unique global journey. His mission? To delight every guest with flavorful creations and indulgent desserts that spark pure joy.
